There is a superstition that says if you eat a lot of strawberries, then your baby will be born with a head shaped like a strawberry. Well, if that is true, I will go ahead and apologize to any future kid of mine. Because I love strawberries! I eat them by themselves and with just about anything. I love them in my salad, sometimes on top of a sandwich. I make strawberry lemonade all the time! I love strawberry cake and cupcakes. I eat strawberries with Splenda sprinkled on top when I want fewer calories. But my guilty pleasure is sliced strawberries that have marinated in the refrigerator with pure sugar. This creates a thick syrup.

what you need

1 Tbsp. cinnamon sugar
1 tsp. ground cinnamon
2 slices of Texas Toast
1 egg
1/4 cup milk
1 tsp. vanilla
sliced strawberries
sugar
butter
whipped cream (frozen and thawed at room temperature)

The night before: Cover sliced strawberries with sugar and refrigerate. Strawberries should be completely covered in sugar to draw out the fruit’s juice. This makes a very thick syrup if refrigerated overnight. Still a great addition, if refrigerated for 45 mins to 1 1/2 hours.
Generously butter Texas Toast and place in toaster.
Mix egg, milk, vanilla, cinnamon sugar, and cinnamon in a bowl until blended. (Sometimes I add a little artificial sweetener when I want this to be a little sweeter.)
Place the toasted bread in the mixture and be sure to cover both sides evenly. (Don’t leave in the mixture too long or this will be very soggy.)
Cook in a nonstick skillet on medium heat. Cook 2 to 3 min. on each side or until golden brown.
Serve with strawberries and top with whipped cream. (I like frozen whipped cream because it has an ice cream feel to it but fresh whipped cream does give you a more fluffy, smooth texture going down.)
